My Two Aunts’ Chocolate Recipes
My two favorite aunts, Emma and Eliza make two excellent chocolate cakes. When it comes decided which one is the best, our family is actually divided into two parties. I won’t tell you which one I prefer, but what you can do is bake both and choose for yourselves!
Aunt Emma’s Chocolate cake
Ingredients:
3 eggs
100gr (3½ oz) sugar
3 tbsp flour
50gr (1¾ oz) butter
200gr (7 oz) extra dark chocolate (85% cocoa)
Caster sugar for dusting
Directions:
Melt the butter on a low heat, set aside and let it cool to room temperature. Do the same with the chocolate, separately.
Separate the yolks from the whites. Whip the latter with the caster sugar until firm. Mix the yolks with the melted butter, and the flour, adding one tablespoon at the time. Mix well, then incorporate the whites, gently stirring until perfectly blended (the white has to disappear).
Preheat the oven at 180°C (356°F). Grease a round 30cm (12in) cake tin, dust with flour, pour the mix and bake for 10-15 minutes.
When it is cooked, let it cool to room temperature, and dust with caster sugar.
Aunt Eliza’s chocolate cake
4 eggs, yolks and whites separated
4 tbsp bitter cocoa powder
300gr (10½ oz) sugar
250gr (9 oz) flour
200gr (7 oz) butter, melted
½ glass red wine (yeah, no typo here)
1 tsp baking powder
1 tbsp rum or other liqueur
Directions:
Melt the cocoa powder with wine and sugar and cook for 5 minutes, stirring. Take it off the heat and let it cool to room temperature, then add one yolk at the time.
Put one cup of the cream aside, put the remaining in a bowl, and add the flour one tablespoon at the time, the butter, liqueur, baking powder. Whip the whites until firm then add them as well.
Preheat the oven at 200°C (392°F). Grease a round cake tin, dust with flour, and bake for 45 minutes.
When the cake is cooked and at room temperature, spread the cup of chocolate icing on it.
